Russian Mutton: Ingredients & Recipe Below:-
- Heat 7 tbsp mustard oil in a Kadhai and add in 1 kg mutton followed by 1 tbsp salt, 3/4th tsp turmeric, 2 tbsp ginger-garlic paste, 2.5 inch cinnamon stick, 3 green & 1 black cardamom, 1 mace and 1 star anise. Fry on high for 20 minutes.
- Dry Roast 3 strings of curry leaves, 4 handful of foxnuts, 1.5 tbsp coriander seeds, 1 tbsp each of stone flower, black peppercorns, cumin seeds, 1 tsp caraway seeds, half tsp carom seeds, 2 long pepper, 5 cloves, 2 black cardamom, 15 garlic cloves, 8-10 green chillies and 6-8 dry red chillies on low flame for 2.5 minutes. To these add in 5 crispy fried brown onions and 200 grams curd blending together into a smooth paste.
- Add this paste in the Kadhai and fry on medium low for 6 minutes. Now add in 4 cups of hot water mixing well and close the lid turning flame to low for an hour checking and stirring in between. Garnish with roasted crushed kasoori methi and chopped coriander leaves.
